Barilla Creamy Genovese Pesto Chicken Pasta Review

As a mom, my life can be a little hectic and sometimes I don’t want to make pesto by hand. Sometimes the quickest thing that I can purchase in the stores are jars of Barilla Creamy Genovese Pesto and of course Barilla pasta. I have been buying the Barilla gluten free pasta as I can no longer eat wheat and it has to be my all time favorite gluten free pasta. I’ve been purchasing it for over a year but this creamy Genovese pesto is new and I have never been a huge fan of pesto until now. Once I received my package from Moms Meet with my very own Pesto apron, I knew I had to come up with a quick and fun recipe.

For dinner one night that Jason was home, I decided to use some of his seasonings that he uses on chicken when he uses his smoker. I used garlic butter on three chicken breasts and I used some other on the other three we had left over. As I let the chicken marinate with the seasonings, I got to get started on the salad and getting the rest of the meal ready. Once I cooked the chicken in the oven for about 45 minutes, I got the pasta ready to go. I like using the old method and traditional method of cooking pasta with a large pot filled with water and salt. Did you know that instead of adding olive oil to your water while you cook the pasta, adding salt will actually make the noodles not stick together. I know I was completely blown away when I learned of it and I did that with my gluten free spaghetti noodles this time. Holy smokes….they weren’t stuck together in a giant clump like they normally are! Who knew?!

After the noodles were finished boiling and they were ready to use, I drained the water and then I added the noodles to a bowl.

I then used the jar of Barilla Creamy Genovese Pesto and added to the noodles where I mixed them up. Making sure that every inch of each noodle was covered in the pesto. As I was getting the noodles into the bowl to serve our dinner out of, I cut up the chicken to lay on top of the pesto. I also added a few cherry tomatoes to the top of the pasta and chicken to add a little extra color and garnish to our dinner. While Olivia just ate plain noodles, she did try one noodle with the pesto and said it wasn’t too bad. This was a great dinner and for Olivia to say something that like without turning up her nose was a success! Jason too had never had pesto before and after this dinner, he has found he loves it too!
