So we have been trying to go low-carb in our home because we are needing to lose some weight…well for me and Jason that is. One thing that I have been looking for online is some easy low carb pizza recipes since we do love our carbs and pizzas! We have personally tried the cauliflower pizza crust and all I can say is yuck! Olivia and I both hated the texture and couldn’t do it at all. We tried to like it over and over but just couldn’t. It had this funky taste too which we didn’t like. Well I happened to find some coconut flour in our local Walmart Neighborhood Market and it wasn’t an outrageous price either! So I found a recipe that I wanted to try out for a pizza crust that used coconut flour compared to almond flour since I’m allergic to most nuts.

So this is the recipe that I started to use and then found a better recipe and had a few good friends try it and said it was so good. Not a chance you could tell it was low-carb! Score! This pizza Olivia even tried and she said she really likes the crust and Jason enjoyed it as well. He said that he could taste the coconut but it worked well with the pizza. I’ll take that over he hates it. So if you are looking for an easy crust to make that is gluten free and low-carb check this one out and make it yourself!

 

This is a keeper for our family and we plan on making more pizza this Friday! yay!

Homemade Paleo Mayo Recipe

Last month I decided to try something new. I wanted to try a new recipe and wanted to see if it was easy to make and man was it! I used my mom’s immersion blender and it was so easy to make. I will say when I move out of their house, I will be purchasing one for our house. I want the Kitchen aid One that is like sky blue color. It’s absolutely beautiful!

 

So this recipe was so easy to make and I wanted to share it with you. The original recipe I found on Pinterest and I was so glad that I made it. I should have followed the recipe a little closer as my egg wasn’t room temp and neither was my mustard. But either way it turned out really good. Next time I might even add a little garlic to the mix to give it some extra flavor to it! Either way it’s so easy to make and it’s so good too. I used avocado oil and really think it tastes better than the store bought. I have been looking for products that have been preservative free because of my allergies and this mayo works for me! Here is the recipe:

 

Ingredients:

  • 1 cup of Avocado Oil
  • 1 egg at room temp
  • 1/2 teaspoon of Dijon mustard at room temp
  • 1 tsp of water (I used cold water)
  • 1/2 tsp lemon juice
  • 1/2 tsp Himalayan salt

Instructions:

  1. Pour the avocado oil into a large jar.
  2. Add the egg to the jar.
  3. Add the mustard, water and lemon juice into the jar next.
  4. Let the ingredients settle for about a minute (I let it settle for about 2 minutes as I was cleaning up).
  5. Take the immersion blender and place into the jar.
  6. Turn the blender on and very slowly move the blender to the top of the jar. Continue to do this until all the ingredients are mixed together. Make sure not to go fast though this is very important not to forget!!!!
  7. Then either place into a different jar or add a lid to the jar that you have mixed the mayo in and place into the fridge.
  8. Store for up to 10 days in an airtight container!
