A Healthy Dinner!

Tonight I was in the mood to cook a healthy dinner so I did. It was just Olivia and I eating here so I cooked Olivia some chicken nuggets (her request) and gave her a piece of bread and lots of pineapples which she demolished. Yum. As for my dinner I cooked some Lemon Pepper Tilapia (which I have never had or cooked), fresh green beans out of a friends garden and fresh watermelon. Yum. I have to say that was the best dinner I have cooked in a long time. I will definitely be eating more tilapia in the near future. I didn’t realize it was that good but it was. Too bad the other members in the house had to miss out. I think next time I make it I might bread it and fry it up and/or bake it and get Olivia to eat it too. Just like fish sticks. 🙂 So if you have never tried tilapia then you should!!!
