Crockpot Balsamic Chicken

I have been trying new recipes at home lately that we have found off pinterest and honestly I have found a few that we have fallen in love with. This one was no different than any other that I found. We loved it and it was a hit in our house! Even my picky eater loved it and asked for seconds which for us is a big deal!! So here is the recipe and I hope that you all enjoy it.

Crockpot Balsamic Chicken

Ingredients: 

  • 4-5 boneless skinless chicken breasts (I used frozen ones from the freezer)
  • 1/2 cup balsamic vinegar
  • 1 small onion (I sliced in quarters)
  • 1 tsp minced garlic
  • 1 dash of salt
  • 1 dash of pepper
  • 2-3 tsp of Extra Virgin Olive Oil
  • Sprinkle of Basil Leaves
Directions:

Take the E.V.O.O. and add to the bottom of the crockpot. Put the crockpot on low and then add the chicken breasts in the crockpot. Add the salt, pepper, garlic, onion and basil on top of the chicken breasts. Then add the balsamic vinegar on top of everything in the crockpot. Trust me you may not think that 1/2 cup is enough for everything inside but it is plenty once the meal starts cooking, all the juices and goodness starts marinating the chicken and it’s goodness. I allowed to cook on low for around 8 hours or so and by the time it was dinner time, the chicken was so moist it was falling apart.

I served with couscous and roasted asparagus. It was perfect for a cold day. We will be making this dinner again and we just finished the leftovers last night for dinner. It was amazing and Olivia even asked for seconds again last night so I split my chicken in half and gave it to her.
