Stand Mixer

Do you have a homemade dinner or recipe that you find it hard to make with your regular mixer? Man I do all the time because it just doesn’t seem like it’s fast enough or that it takes more than one hand to use it. And sometimes I need both hands to continue making the recipe in the steps it’s needed. Take me and making homemade chocolate chip cookies which I love to make at the holiday season. It’s always been a tradition for me and my 3 year old to start baking something up to help make the house smell yummy of course and to also just have some nice warm cookies and milk for Santa Claus. I hate using my mixer because it’s really a pain in the butt to use. It’s like I have to have about 4 hands to make one dozen of cookies with the current mixer I have. I really am hoping that for Christmas I will be getting a new one and it would definitely come in handy with me cooking more dinners at home. Of course the recipe that I use for my Chocolate Chip Cookies is located on the toll house chocolate chip bags. It’s well worth it too because making up recipes on my own is not good but it helps. Here is the recipe that I use:

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups (12-oz. pkg.) Nestle Toll House Chocolate Chips

Directions:PREHEAT oven to 375° F.COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets. BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. PAN COOKIE VARIATION: Grease 15 x 10-inch jelly-roll pan. Prepare dough as above. Spread into prepared pan. Bake for 20 to 25 minutes or until golden brown. Cool in pan on wire rack. Makes 4 dozen bars. SLICE AND BAKE COOKIE VARIATION: PREPARE dough as above. Divide in half; wrap in waxed paper. Refrigerate for 1 hour or until firm. Shape each half into 15-inch log; wrap in waxed paper. Refrigerate for 30 minutes.* Preheat oven to 375° F. Cut into 1/2-inch-thick slices; place on ungreased baking sheets. Bake for 8 to 10 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Makes about 5 dozen cookies. (I normally make half the batch one day and freeze the other half)

When I do this my mixer takes forever to blend everything together because it is old and it needs to be replaced. I have tried it several times without the mixer and that takes even longer. My arm gets tired and I feel like stopping the cookie making process! What more could I ask for. I really want Olivia to be able to join in the fun of making the cookies but she will use my mixer and the cookie dough goes everywhere! Then I have a fun time cleaning up.
